Work with what the land already does
Most rural properties here arrive with a structure already built into them: terraced marges, an almond or carob grove, a safareig cistern and a network of channels that used to move water around the plot. Treating that as heritage rather than as clutter usually produces a better result than importing a garden layout onto it.
The realistic approach is to garden intensively near the house and manage the rest. A planted core around the terraces, then grove, meadow and track beyond it that get cut a few times a year rather than maintained.
Two practical issues run through everything on rural land. Water rights and supply are rarely the same as in a village, and planning rules on rústico ground are stricter, which matters before anything is built.

Can a company take on several hectares?
Some can and some only work on enclosed gardens. Say the size in your request and it goes to the ones equipped for it.
Do I need permission to work on rural land?
Often yes, particularly for building, for tree removal and in protected areas. The company quoting should tell you what applies before work is booked.
Is old terracing worth rebuilding?
Usually. A collapsed marge tends to keep collapsing further, and rebuilding it holds soil that would otherwise end up at the bottom of the plot.
