Sourcing is the part people underestimate
A mature olive, a specimen carob or a run of large cypress is not something you order and receive. Stock moves between island nurseries and mainland growers, prices change with size and season, and the good specimens go to whoever is looking at the moment they arrive.
There is paperwork behind it too. Xylella fastidiosa is present on Mallorca, and movement of host species is controlled, which is one reason a company sourcing locally can sometimes deliver faster than a cheaper mainland quote.
Planting season is the other constraint. Autumn through early spring is when things go in the ground here, so a job that slips past April usually means either watering hard through summer or waiting.

When is the best time to plant on Mallorca?
Between October and March for most things, so roots establish while the ground is damp and cool. Summer planting is possible but it commits you to watering.
Are mature specimens worth the money?
For structure and shade, often yes, because you are buying years. For shrubs and ground cover, smaller stock usually catches up within two seasons and costs a fraction as much.
